PreparationCombine 1 egg and 2 tablespoons of cake flour to make the batter.
- Spread kitchen paper in a tray or plate, arrange the scallops, and cover with plastic wrap.
- Place a tray or flat dish filled with water on top of step 1 as a weight and let it sit for 15 minutes.
- Remove the weight and plastic wrap from step 2, and pat the scallops dry with kitchen paper. Dip them in the prepared batter and then coat them with breadcrumbs (fine), shaping them into a round form.
- Heat 1 to 1.5 cm of oil in a frying pan over medium heat, and fry at a high temperature of 170 degrees for 1.5 to 2 minutes, flipping them until golden brown and done.
If the scallops are of quality that can be eaten raw, frying them rare is also recommended.
