Baby scallop takikomi rice

Ingredients (Serves 2)

  • Rice・・・2cups 
  • Baby scallops・・・150g 
  • Carrot・・・1/4 piece 
  • Shimeji mushrooms・・・1/4 pack 
  • Ginger・・・2.5g 
  • A Dark soy sauce・・・2 tablespoons 
  • A Mirin・・・2tablespoons 
  • A Water・・・400cc

How to make it

Preparation
Wash the rice and drain it in a colander.Slice the carrot into bite-sized pieces, and cut the shimeji mushrooms into bite-sized pieces as well.
  1. In a pot, combine A: 4 tablespoons of dark soy sauce, 4 tablespoons of mirin, and 800cc of water. Once it comes to a boil, add the baby scallops, carrot, shimeji mushrooms, and ginger. Bring it to a boil again, then turn off the heat and separate the ingredients from the seasoning liquid to cool.
  2. In a rice cooker, add the rice and the seasoning liquid up to the appropriate level, then place the ingredients on top and cook. Once done, mix everything together and it's ready to serve.
